Question: So I have been wanting to go on a low carb diet but I have been very busy at work which makes it harder on me. I need some very quick meals that I can make to hit my low carb macros. Basically I just want a very simple day meal plan and I can jus eat the same thing every day. I for one have no problem doing this. If anyone has any suggestions it would really help, thanks everyone!

Make hard boiled eggs. Buy tuna and mayonnaise and maybe mustard if you like it. Claussen's dill pickles are great snacks. You can make microwave cheese crisps (google it). Take salads to work with hard boiled eggs, bacon and make yourself an apple cider vinegar and olive oil dressing with some garlic salt. Cook chicken and tear it up.. make a dip of some sort with mayo, and have a salad too... or just mix the chicken into a salad. Check out Pinterest for low carb casseroles and make a couple on Sunday to eat during the weekdays You might consider joining the facebook group, It's a Low Carb-Atkins Life For Us. GREAT people, no drama, they have a wonderful documents section with recipes and information. Plus the people are supportive and no one minds if you ask as many questions as you like. All are there to help and support each other. You can do this.

One fillet of Salmon, covered with thin slices of root ginger, spring onions and smoked bacon, sprinkled with Soy Sauce, wrapped in a foil parcel and cooked in the oven for about fifteen minutes. Vegetable Stir Fry is very easy and you can use any veggie you have. Broccoli, Cauliflower, tomato, onions, cabbage, carrots, celery, whatever you have or like (if you use peas, add them about 60 seconds before everything else is done or they will get too done). Place a small amount of olive oil (about a teaspoon) in a frying pan or electric skillet 350 degrees should do it for temp, chop and add veggies and then about a half of a cup of water. This will not only help keep the veggies from burning but allow you to steam and stir fry at the same time and use much less oil. You can either get a stir fry sauce or just use soy sauce (about 2 tablespoons). Quick, easy and very good for you.

Make a batch of bacon lined egg cups for breakfast. Egg salad and potato chips for lunch. Hamburger, salad with lots of dressing for dinner. And buttered vegetables. I'm not so sure how accurately that hits what you need, but it is very high fat, medium protein and low carb

I am a pretty big fan of allrecipes.com. On that site, you can change a recipe to "fit" the number of people you are planning to serve. The only problem I've found is that it's hard to buy stuff in the store for only two people. I've invested in one of those vacuum sealers (from Target). It's nice to know every once in a while I can just reheat something I made a few weeks or a few months ago, but it's not exactly like leftovers because I'm not eating the same thing two days in a row.
