There are loads of "healthy" cookbooks --so many, in fact, that it can be overwhelming. And like anything else in this world, they can vary tremendously in how tasty their recipes are, how easy to make, the kinds of ingredients they use, and even *how* healthy they actually are.
There is a load of stuff online too (for free) about eating healthy.
You can find both some suggestions for healthy cookbooks, and loads of stuff online about eating healthy (and losing weight too if you want), in my answers to these previous questions (as well as information I've written in some of them).
Can't remember exactly which one has the actual cookbooks though--oh, here it is:

www.sparkpeople.com has a great recipe area for free in there! You don't even have to sign up for an account to get to recipes.
I went to Barnes and Nobles and bought Healthy eating cookbooks, think they were around 10 to 20 bucks each. Great recipes though and have the information you need all right there. None in the cook books are hard to make either. Make sure to find one with pictures of the foods to give you an idea if something looks good or not.
You might want to try the American Heart Association and the American Diabetes Association for recipes and cookbooks.
The American Diabetes Association has several types of cookbooks:
Carb Counting, Cooking for Two, Exercise & Weight Control, Heart Healthy, Libros en Espanol Meal, Planning & Recipe Combos, Quick & Easy, Regional & International.
If you go to Amazon.com you can browse through the American Heart Association cookbooks to see which one would suit you and your husband best.
I hope you and your husband reach your goal.

All cookbooks have healthy recipes, unless they are cookbooks that have only dessert recipes. Start in a bookstore. There will be a cookbook section.

There are many healthy foods that are quite high in calories. Olive oil is a good example. Mix it with some balsamic vinegar and drizzle it all over a mixed salad. Other high-cal healthy foods are bananas, avocado, nuts and seeds, and cheeses.
It is always better to eat good quality food than junk-food, even if you need more calories. This is because healthy food is packed full of vitamins and minerals so you get a good range of nutrition as well as calories. Junk food is nutritionally "empty", i.e. has nothing in the way of vitamins, and is just a source of calories.
I find it quite easy to eat a healthy diet of 1400 calories or more per day so maybe you should look at whether you are being too hard on yourself when picking what food to eat. You need to enjoy what you are eating and that means treating yourself now and again.
