Question: Does anyone know a good Low Carb Cheesecake recipe? I have been 'googling' them, but I want to know if anyone has any good ideas :) Thanks in advance.

Low Carb New York Ricotta Cheesecake Ingredients 24 ounces cream cheese, softened 1 cup extra-fine whole milk ricotta cheese (to refine, process in a food processor for 1 minute) 1/2 cup sour cream 1 1/2 cups sugar substitute (recommended: Splenda) 1/3 cup heavy cream 1 tablespoon no sugar added vanilla extract 1 tablespoon fresh lemon juice 2 eggs 3 egg yolks Special Equipment: 1 (8-inch) springform cake pan Directions Preheat oven to 400 degrees F. Spray the springform pan with nonstick vegetable oil cooking spray. Set aside. In a shallow roasting pan big enough to fit the cake pan, pour about 1-inch of water and place it on the center rack of the oven to preheat. In the bowl of an electric mixer, beat softened cream cheese, ricotta, sour cream and sugar substitute on low speed for about 1 minute until well blended. In a separate bowl, using a wire whisk, mix heavy cream, vanilla, lemon juice, eggs, and egg yolks until blended. Turn the mixer on medium speed, and slowly pour the egg mixture into the cream cheese mixture. Beat just until blended and then turn off; be careful not to over-whip. Pour batter into the greased springform pan. Place pan into the heated water bath. Bake for 15 minutes, and then lower the oven temperature to 275 degrees F. Continue baking for 1 1/2 hours, or until top is light golden brown and cake is pulling away from the sides of the pan. Turn the oven off when finished cooking and leave the cake in the oven to cool for 3 more hours. (This will keep the cake nice and tall.) Then remove cake and refrigerate before serving. Serve chilled.

I don't know what kind of recipe you're looking for. (side dish, main dish, etc) But, I got this idea for meatloaf from a friend of mine. It's really easy, too. It's just 1 pound of hamburger meat, 1 package of Liptons recipe secrets onion soup mix, 2 eggs and this is the low-carb part... instead of crackers or bread crumbs, you use crushed up pork rinds! It's really delicious and low carb. You can also add any of the other stuff people put into meatloaf like onions and peppers, I just don't really care for all that stuff. A really good salad recipe is also a brocolli and cauliflower salad. Take equal parts of brocolli and calliflower florets, add about 1 cup of cubed cheddar cheese, 1 cup of crumbled up bacon. The dressing is about 1 cup of mayonaise or miracle whip, 2 Tablespoons of apple cider vinegar and 1/4 cup of Splenda. Or to taste. Poor the dressing over the brocolli and cauliflower mixter and let the flavors marry. I love this salad and it's a great change from regular salads.

based on the original Atkins book, as I seem to remember it, basically you use cream cheese that you whip up, add some vanilla exract, and I believe some cool whip. Simply mix all this together with sweetner, to taste, put in the Frige for about 2 hours, and voila, you have a form of a cheesecake. You can add a few eggs, leave out the cool whip and bake for about a 1/2 hour, a different texture.

the following is a recipe for low carb chocolate cheesecake: elements : a million pkt Gelatin a million cup Boiling water 16 oz..cream cheese -- softened a million tsp vanilla 16 pkt equivalent(r) sweetener a million oz..unsweetened baking chocolate squares melted approach : Dissolve the gelatin contained in the boiling water in a blending bowl. Stir nicely. decrease the cheese into small products and position contained in the dissolved gelatin. upload melted chocolate. mix. upload the vanilla, sweetener; beat nicely with an electric powered mixer (2+ minutes on med/hi speed). Pour into the prepared muffin cups or a buttered pie pan. kick back till agency, about 2-3 hours.
