The acid in the lemon prevents the growth of bacteria which turns the fruit dark as it starts the decay process.
because lemon juice has an ascorbic acid also known as vitimin C. that's the main reason why lemon keeps other fruit (if u put it) from darkening but of course their are other factors that contribute a fruit from darkening this are copper, oxygen, substrate and an enzyme... hope that would help
When air hits the peeled fruit, it causes oxidation and turns brown. Lemon juice reduces oxidation and keeps it from turning brown.
I agree with daft one. Anything acidic will stop oxidation. Only you wouldn't want to use any old acid - it could be toxic.
