faux fried rice: what you'll need; rice ground beef(try to get the leanest meat or ground turkey taste the same) green onions/scallions cook rice according to package and servings you want, brown and drain beef in skillet on med high heat, cut up onions bite size. Combine all ingredients. top with soy sauce. this stuff is good and last a couple of days if your on a budget..plus it's good for you enjoy

Salads, Grilled foods, boiled veg and potatoes Fruit. Your dad will know his limitations in respect of how many grams of sugar type products he can eat ,You will still have to consume XXXX calories a day ( depending on Age/ height etc.) The food should be cooked around those parameters. Type "cooking for diabetics book" into a search engine, but I know you can buy one from Amazon under £10 ($15)

you know offspring don't have an inherent chance of getting type II diabetes, right? And if your dad has type I than you'd already have it from when you were born. So while being largely obese would give you some chance of developing type II -- it wouldn't be from the math you're using :) Anyhow, how about this chicken dish? cook and chop chicken breast (1 breast per person). Add 1 can salsa (label read or make your own). Add more tomatoes to taste. let that simmer a bit. Stir in a few crushed taco chips. Enjoy

Put some oil in a pan.heat it.(flame should be low) add cummin seeds. 1-2 green chillies finely chopped. put the diced vegs. put some salt and saute it. Put an egg in the same pan and scrumble it over the vegs. then put some peeper or any seasoning u like and then add the boiled rice.mix every thing evenly. There are lots of options to be healthy, but remember to include some good fats and flavor in your recipies because otherwise he won't want to stick to his new diet and will end up binging. Not good. Also, no frying (!) and the less butter or oil you use the better. Any kind of chicken or fish broiled or grilled (with creative seasonings to change it up) is great paired with fresh steamed veggies w/ salt and pepper. sounds boring but it's great if you spice it up with herbs, light cheeses, lemon zest, etc., you can have different flavors all the time. Get light italian dressing and drizzle over sliced tomatoes, cucumbers and low fat feta cheese for a side dish. My favorite snack right now is baby carrots with hummus (roasted red pepper flavor) and it's awesome. filling and flavorful and light on calories. If ever in doubt, wrap your favorite salad, easy on dressing, in a pita or something. These are only ideas, nothing fancy, but hopefully it helps!
