Question: I know dressing is very fattening, but I love salad! So any good recipes that are healthy? No fish though! Please! Haha thanks!

Boston lettuce, chicken pieces cooked in buffalo sauce, avocado chunks, cucumber slices, grape tomatoes and a bit of blue cheese dressing.

Here's one of my favorites: Green Bean and Cherry Tomato Salad 1 1/4 pounds green beans 1 1/4 pounds cherry tomatoes, quartered 1 teaspoon chopped fresh or 1/2 teaspoon dried oregano (can also use italian seasoning) 2 tablespoon red wine vinegar 1 tablspoon minced shallots 1 1/2 teaspoons extraviergin olive oil 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1) Trim ends from beans, and remove stems. Cook beans in boiling water for 7 minutes or until tender. Drain and plunge beans into ice water, drain. Place beans, tomatoes, and oregano in a large bowl, toss gently to combine. 2)Combine vinegar and shallots, stirring with a whisk. Let vinegar mixture stand 10 minutes. Add oil, salt, and pepper to vinegar mixture, stirring with a whish until well blended. Pour vinaigrette over bean mixture, and toss well. Serving size: 1 cup Calories 51 ; Fat 1.7g ; Carb 8.7g ; Protein 1.9g ; Fiber 3.2g

I have a slight twist to the regular salads, and can be plated up nicely. I will rarely use a dressing, but you could use a low fat mayonnaise or a quality EVOO. Lettuce Cups. (roll ups) by Dune (5/4/08) Remove several whole leaves, from a crisp Iceberg Lettuce Add to each cup:- Sliced Celery, Cucumber, Egg & Tomato. Asparagus spears. Grated Carrot & Cheese Smoked Fish Flaked (sliced cold meats ) Season to taste and roll up. Secure with cocktail sticks if desired.

Summer Fruit Salad -Romain Leafy Salad lettuce -StrawBerries -BlueBerries -Purple Grapes -Any other berry you may want;Blackberry, Rasberry. ect. -Fruit Vinagrette ( at walmart there is several diffrent kinds; Blackberry, superfruit, something like that) Put the salad in a bowl. Wash all the fruit. Cut the strawberries into medium thin slices. Toss in all the fruit and pour on the desired amount of fruit vinnagrette

Why would dressisngs be fattening?? They are NOT!! They are usually olive oil or other good veggie oil that the food police say are good for us to have. If they want me to dip my bread in olive oil instead of having melted butter brushed on it, what does that say about them and their veggie oil?? I have my real dressings, the good flavorful ones, on the side! I do not pour dressing all over the salad to drench it. That way you eat much less of the dressing. Well it can depend on the place. Even though it overall is healthier for you then a burger and fries, at some restaurants, a salad can have over six or seven hundred calories, so beware. It us usually best to ask the restaurant if there is a nutrition value chart for their menu, or go online ahead of time. Im pretty sure it became a law (I'm not sure if its national or only in certain states) that is requiring nutrition info to be availiable at all resturants. Also, although they likely wont be able to give you nutrition values, if you eat at a locally owned restaurant, they are less likely to pump their foods with not so good for you although good tasting chemicals and such, so if you order a grilled grilled chicken sandwhich, your getting a grilled chicken sandwich, with the nutrition values you'd expect from a grilled chicken sandwich. When looking healthier menu items at restaurants, remember a few things. Avoid any fried foods. Make sure your meal includes some sort of fruit and or vegtable. Avoid any cream sauces. Try to balance out all food groups and dont eat to much of one thing. If possible try to get breads or pastas that are whole grain or whole wheat. Just the basic things that you would think of if you were trying to eat healthy at home. Another thing to remeber is portions. If you have have half of a half pound burger, with steamed veggies instead of fries, you can get the satisfaction of the burger without, really eating enough food that it becomes bad for you. I mean, a burger is grilled beef and a bun (which really is the low point of a burger, unless like its wheat or something, along with condements) and some vegtables on top, nothing to bad about that. Also remeber eat until your full, and eat at a slower pace. If you are full half way through your pasta stop eating and take it home, because restaurant potions are usually large anyway. So I know this is way more then you wanted, and I still havent really given you the short, sweet and to the point answer you wanted, but somethimes quality involves quantity. So if you want certain things here you go: -A grilled chicken breast with steamed vegtables. -Half of a hamburger (or veggie burger, if the restauant carries them), no condiments, with applesause or veggies instead of fries, and if you really want to be good, no, or only one side (top or bottom) of the bu -Some sort of pasta dish with pasta, with maybe a little bit of some sort of oil, roasted veggies, and a sprinkling of cheese (the restaurants variation something like this), -Grilled or steamed fish with veggies etc So with these suggestions, and what I said to remeber, I hope I helped you find a way to eat more fun and less bland food then salads sometimes, when you have to go out. :)
