Question: I've been eating them for a few days now, every night with my husband. They're soaked in sea salt and regular table salt. I've noticed my clothes fitting more snug and I feel bloated. Could it just be water retention from the salt and water? Have you ever heard of someone gaining rapid weight from eating boiled peanuts? Maybe me eating at night contributes also....

As you mentioned, boiled peanuts are very salty. My guess is you are retaining water from the increase in sodium you've had from the peanuts. If you've gained weight quickly, it probably just is water weight. Perhaps try drinking a lot of water to flush out the sodium from your body. Also eating at night tends to add weight just because after you eat, the food just sits in your stomach as you sleep. Your metabolism slows at night so whatever you eat within a few hours of sleep, doesn't get burned off as energy. Again, I'd suggest drinking lots of water to flush out the salt and maybe cut back on the snacking close to bedtime.

You definitely won't gain any weight today. There are about 170 calories in a serving of peanuts. So you had 5 servings- that's 850 calories. Do you know that it takes an extra 3500 calories on top of what you normally burn in a day to gain 1 pound of fat? Assuming you burn about 2000 calories a day, you can still eat more than 1000 calories and maintain your weight. You should definitely eat more today. In fact, eating only once a day will make you GAIN weight in the long run. (Your metabolism will slow down, causing your body to burn fewer calories than before). Get in a couple of small, balanced meals. You'll do more harm than good if you don't eat for the rest of the day. Think of the positive side of things- peanuts contain fats that are GOOD for you and are loaded with protein, which is something you absolutely need.

Peanut butter does make you gain weight, just because of the oils and sugars. My personal trainer makes me eat about 4 dixie cups of it a day, to bulk me up.

A whole bunch of peanut butter sandwiches every night or every other night for supper should have the desired weight gaining effect. Make sure you spread the peanut butter on very thick and you will definitely gain weight. Also make sure that you have a good dinner beforehand because if you only have a small dinner beforehand then the peanut butter sandwiches supper will be less effective. Supper calories are even more fattening than dinner calories so a good supper is the way to gain weight. There is actually a saying that "more people are killed by suppers than the sword" and in the Middle East quite a few people are killed by the sword. As you are badly underweight suppers won't kill you unless you keep gaining a lot of weight from fattening suppers AFTER you have reached your target weight.

YES!! I spent a summer eating them and gained like 7lbs back in college. I stay away from them now. I LOVE THEM, but I think its water retention from all of the salt.

When you boil broccoli (or any other vegetables) you lose many important nutrients. Unless you are planning on consuming the water it is better to steam. When you steam vegetables only some of the nutrients are lost. To get get the total heath benefits you should actually eat the broccoli raw. I personally don't like raw broccoli so I would steam them. You don't lose many nutrients and it tastes better.
