I've been on and off a low carb diet for the better part of the last 15 years. The thing you really need to remember is no white flour, no white sugar.
The best news is that basis of a low carb diet can include copious amounts of asparagus, broccoli, dark leafy greens, mushrooms, chilis, Brussel sprouts, lettuce, okra, fresh herbs and more!
Animal proteins are extremely low in carbs, in fact, most contain none whatsoever. Chicken, duck, turkey, beef, steak, roasts, fish, shellfish, etc. are all permisible on a low carb diet.
Cheese, no-fruit yogurt, mayonnaise, eggs, butter, cottage cheese, sour cream and cream cheese are all low carb.
Snacks can include peanuts, pork skins, low carb crackers and (again) lots of dark leafy veg
There are many books on the subject of low-carb dieting and many sites out there. This is merely brushing the surface but I do hope that it can get you started.
